Pasta a la Norma is the most popular pasta in Sicily, it is named in honor of the opera Bellini Norm, which appeared in the 19th century, and is considered the main work of this composer. The main ingredients of this pasta: tomatoes and eggplant, it is light, fragrant and incredibly tasty.

In order to cook this paste you need:

• 1 large eggplant

• Salt

• Olive oil

• 2 cloves of garlic

• 400 grams of chopped or canned tomato

• Paste paste of the type of rigatoni or penn

• 80 grams of grated ricotta or other cottage cheese

• Basil leaves

Cut the eggplant in cubes about 1 cm. Sell ​​them generously and leave them for 30 minutes. Then rinse and fry in olive oil until golden.

Put the eggplant cubes and proceed to the preparation of tomato sauce. To do this, heat olive oil in a pan, add cut garlic and fry until the aroma appears. Then add tomatoes, a little water or tomato juice, salt, pepper and fry for 15 minutes. Closer to the end, add the leaves of basil and eggplant.

Take a large pan, bring it to a boil, salt and add pasta there. Cook them to the state of al denta. Add sauce to pasta, mix thoroughly. Sprinkle the paste with cheese on top and serve to the table.
